Breve ejemplo de como hacer aceite de coco casero, para comer, hacer jabón, para el pelo, para la piel etc. Usando la extracción con agua caliente. Preguntas típicas: 1-¿El calor excesivo modificará molecularmente el aceite de coco, dañando sus propiedades? Hola!! Todos los aceites sufren una degradación térmica a altas temperaturas!! Esta degradación térmica se puede resumir en Polimerización, Oxidación e Hidrólisis en el caso de que estuviese en contacto con agua... El aceite de coco es uno de los aceites que mas aguanta esta degradación térmica por tener un alto contenido en grasas saturada (ácido láurico). Es decir que no se oxida porque el oxígeno no tiene por donde atacar la molécula. Por la hidrólisis no hay que preocuparse mucho pues no solo necesita altas temperaturas sino también altas presiones para que ocurra en gran medida... Y la polimerización (que es lo mas perjudicial) ocurre después de freír muchas veces con él, se alcanzan temperaturas de 177 ºC... seguro que los has visto alguna vez... el aceite se convierte en una especie de plástico que parece silicona (es malísimo para la salud). 2-¿Podría usted aclarar cómo hacen "cold press" (prensado en frío)? ¿Sería posible hacerlo sin pasar por el proceso de calentura? El prensado en frío se hace con una máquina (una prensa, en inglés se llama Oil Expeller o oil press). Se hace solo con el coco rallado directamente y sin nada agua, se necesita muchísima fuerza para exprimir bien el coco, y es imposible hacerlo a mano... Eso de "en frío" es totalmente relativo... si está mas frío de 23ºC no va a salir ni una gota de aceite incluso con la máquina.... osea que tendrían que calentarlo de todas formas a una temperatura mayor de 23ºC.... El problema de calentar el aceite es que se degrada con mayor rapidez. Por ejemplo al freír que se alcanzan temperaturas de 250ºC o mas en el caso del aceite de coco. Por eso no es aconsejable freír con el mismo aceite muchas veces (4 o 5 veces como máximo). La temperatura a la que yo lo calenté al principio (para hacer la leche de coco) eran unos 30ºC o 40ºC así que tampoco estaba muy caliente que digamos. Cuando evaporé el agua la temperatura no sube nunca de los 100ºC. Y cuando frei los restos de coco lo hice a fuego muy lento con el fin de que el aceite no se degradará mucho. Evidentemente el que no tiene color es de mayor calidad que los otros dos y se nota mucho en el sabor. Hay una forma de hacerlo sin tener que freír y es dejándolo varios días hasta que el aceite se separa de la leche de coco... esto evita que el aceite se degrade térmicamente... pero lo que no me gusta de este método es que la leche se puede contaminar con bacterias y echarlo todo a perder... en ese caso daría muy mal olor a coco podrido... 3º-¿Cuántos cocos usaste?¿Cuantos cocos necesito?(Y cosas por el estilo).... -Con 20 cocos se obtiene un litro de aceite mas o menos Usos del aceite de coco -Alimenticio (proporciona energía fácil de quemar) -Cosmético (Hidratante y nutriente) y para hacer jabones -Dietético (adelgaza si no se abusa de el) -Capilar (Nutre el cuero cabelludo) -Dentífrico (Con bicarbonato para blanquear los dientes) -Antibacteriano -Antiviral (Mata algunos virus)
